Salsiccia Toscana con Pomodori e Fagioli Cannellini

Long name for a fast and simple Tuscan dinner.
It translates to sausage with tomatoes and cannellini beans. And delicious. 


Salsiccia Toscana con Pomodori e Fagioli Cannellini
     serves 4

Ingredients
olive oil
4 spicy Italian sausages
1 can, 28 oz. plum tomatoes
1 can, 12 oz. cannellini beans
salt and pepper
basil


Directions
Remove the sausages from casings. In a large pan over medium heat, heat the olive oil, add in the sausages, breaking each sausage into 4 or 5 pieces and cook until they brown. Add in the can of plum tomatoes, breaking up the tomatoes as you stir. 


Cover pan and turn down the heat. Let simmer for 5-10 minutes. Strain the cannellini beans and add them to the pan. Stir together. Let simmer for another 5 minutes.

 

I used a shallow soup bowl when serving this, it should be stew-like. The sausage is spicy so if your palate is on the more sensitive side I would suggest serving with bread. Also bread helps soak up all the juice at the bottom of the bowl so bread is suggested no matter what.
